Freezing fish is a good way to keep it fresh but there is a right way to do it. Be sure the fish has been cleaned properly before freezing and keep it in a sealed container. When thawing, don’t use the microwave, even the defrost setting; the dramatic change in temperature might shock the delicate fish flesh and change its texture. Instead, put your frozen fish—still in its packaging or in a plastic bag—in a big bowl and cover it with water that’s a bit cooler than room temperature. Never thaw frozen fish at room temperature or warm water as this helps multiply bacteria.
