Sarangani Bay Pompano, cleaned and degutted

Salt 

Cooking oil

Tamarind Glaze

Cooking oil 

Red pimiento pepper. sliced

Red chilies, sliced

Garlic, minced

Cilantro stems, sliced

Tamarind paste

Water

Light brown sugar

Fish sauce

Fresh cilantro leaves for garnish

Kaffir limes leaves, cut into strips

Green bell pepper, sliced

Procedure:
  1. Rub fish well with salt. Heat oil in a pan. Fry fish on both sides. Set aside to allow oil to drain.
  2. Heat oil in a saucepan. Sauté pimiento, red chili peppers and garlic until fragrant. Add cilantro, tamarind paste and water, put to a boil. Add sugar and fish sauce. When slightly thick, add green bell pepper and kaffir lime leaves.
  3. Remove from heat, pour sauce over fried fish. Garnish with cilantro leaves. Serve.
