Sarangani Bay Seabass, gutted, cleaned & scales removed

Flour

Salt

White pepper

Cooking oil

Sauce

Cooking oil

Red onion, chopped

Garlic, minced

Star anise

Bay leaves

Soy sauce

White vinegar

Gin

Light brown sugar

Cornstarch dissolved in

Water

Salted black bean, rinsed

Chopped cilantro 

Procedure:
  1. Cut 4-5 slits on fish surface. Combine flour, salt and white pepper. Dredge fish in seasoned flour. Heat pan and add oil. Fry fish on both sides until crisp. Drain well and set aside.
  2. In a saucepan, heat cooking oil. Sauté onion and garlic. Add star anise, bay leaves, soy sauce, vinegar, gin and sugar. Put to a slow boil. Reduce until slightly thick. Strain sauce. Discard spices.
  3. Return sauce in the pan. Add black beans and dissolved cornstarch. Cook for 3 minutes until thick.
  4. Pour sauce over fried fish. Top with chopped cilantro. Serve.
