Tarragon leaves

Salt

White sugar

Peppercorn

Olive oil 

Native vinegar

Garlic, crushed

Sliced ginger

Sarangani Bay Pompano, cleaned and degutted

Green long chili, slices

Procedure:
  1. Cut 3 slits on both sides of the fish. Place pompano in an oven proof dish., rub with ginger and garlic.
  2. Combine vinegar, peppercorn, sugar, salt and olive oil. Pour over fish, add tarragon and green chilis.
  3. Cover with foil. Bake in a pre-heated oven at 350 deg F for 45 mins. Serve hot.
